City Roastery is a project created to promote in the market, the coffees that are called “Specialty”, these are coffees from small crops run by farmers who intend to achieve a high quality of finished product, therefore they select their crop in an impeccable way, it will subsequently be analyzed by the SCA (Specialty Coffee Association) which will certify the coffee considered Specialty only if it reaches 80 on an evaluation scale from 1 to 100.
The coffee is roasted with a careful procedure to enhance its characteristics, following a precise heat curve to obtain a perfect coffee ready to be extracted, obviously respecting the extraction parameters of an espresso.
